Chef Jessie Sincioco at Maya Kitchen

Chef Jessie Sincioco demonstrated her masterpiece dishes at the Maya Culinary Art Center. Before I share to you her dishes, let me first share her Maya story.

Ms. Jessie was a career woman. She joined Maya Kitchen’s contest in the 80’s. Her Mango Cake won and Maya Kitchen gave her perks and prizes. Because of this Ms. Jessie became Chef Jessie that made her not only a chef but also a restaurateur of two restaurants in Makati City: Chef Jessie Rockwell Club and; Top of the City by Chef Jessie.

Chef Jessie demonstrated these yummy dishes:

Appetizer : Veggie Chips with Tzatziki. It’s a mixed chips of Potato, Sweet Potato, Beetroot and Carrots. Tzatziki is a greek dip made of yogurt.

Salad : My Garden Salad with chef Jessie’s own dressing. It’s any greens she found in her garden. Beside from the lettuce that came from the kitchen/grocery she mixed: young kamias, pansit-pansitan, ashitaba and many more that I cant recall. She then dress it with her own dressing which is a mixture of olive oil, vinegar and spices.

First Course : Sea Bass en Papillote. It’s a mixture of veggies and fillet of sea bass then wrapped in parchment paper then baked. Its natural juices produce steam thus Chef Jessie said that after baking it should be served immediately and when the paper was cut to open, its steam is very aromatic.

Main Course : Ostrich with Bourguinon Sauce. It’s a seasoned steak of ostrich meat then seared before grilling in the oven. The sauce was poured before serving. She also shared that in plating, carbohydrates (in this case the potato gratin) are always on the right side.

Dessert : Chocolate Soufflé. No need to describe but Chef Jessie advised that it also be served right after baking and dusted w/ confectioners’ sugar while it is still rising. Believe me, when this pops out the oven, the Soufflé really overflowing but in just a few seconds it became 'deflated'.

Bonus Dessert! : Chef Jessie's Award Winning Mango Cake. I really forgot the cake's full name but its really yummy. The cake is creamy-melt-in-your-mouth. Its my first time to eat such cake. its literally "walang katulad" no wonder it won.

The much awaited press launch for Max’s Restaurant’s newest endorser has finally done. Max’s Restaurant launches Coco Martin, an actor and endorser, as their newest brand ambassador.

During the press launch, it was revealed that Coco Martin is really part of Max’s Family even before stardom. He was discovered while he is serving a talent scout. Coco Martin is a dinning crew of Max’s (SM City) Fairview. “Ngiti ka nga” the talent scout asked Coco. He then gave his business card to Coco then advised him to proceed to ABS-CBN center. The rest is as they call history.

Max’s Restaurant current TV ad is just first of three TV ads, the second TV ad will run by last week of February or first week of March. With this we will expect more TV ads in the years to come. Brillante Mendoza is the TV ads director. He too is also part of Max’s Family before; he was part of a TV ad production team before he became an award winning director.

The Maya Kitchen presents Chef Jessie Sincioco

On January 26, Saturday, 9am-1pm, The Maya Kitchen presents well known chef and restaurateur Chef Jessie Sincioco, as she shares her recipes for light, healthy yet delicious dishes to usher in the New Year.

She is an honest to goodness ‘discovery’ of The Maya Kitchen. Josefina Cruz Sincioco, then a novice baker, won the grand prize in the baking category of the Great Maya Cookfest way back in 1983. She credits this as the start of her career in the kitchen.

Her 3-month training at the Hotel Inter-Continental Manila after the competition turned into a full time job with the property. She was sent to train abroad, joined local and international competitions and in 1990, she became the first Filipina Pastry Chef in the history of the hotel.

The chef who, at first, did not have a liking for the smell of the kitchen found initial fame when she, along with expatriate partners, turned the restaurant Le Souffle into a fine dining mecca.

Chef Jessie is now President and CEO of JCS Gastronomie Inc. that operates fine dining restaurants Chef Jessie Rockwell Club and Top of the Citi by Chef Jessie. She is also a co-author of KULINARYA, a Guidebook to Philippine Cuisine.
Dedicated, hard working, feisty and in the end all talent, this is what Chef Jessie Sincioco is all about.

My Canon Story

I joined the "My Canon Story" writing contest. I posted it on their website http://www.canon.com.ph/15years/ few days before the deadline. I thought it wasn't included in the official list of entries for i havnt seen my entry in their gallery - not until now. The winner was already chosen and even though I did not won I'm still happy for its a good friend and co-blogger won. Im happy for him simply because he is so good in blogging but his camera puts him down. Now that he has a new camera, we can expect more from him.
