These are unusual looking eggplants, the ones we get here (in the Netherlands) are the same color, sometimes white or striped, but fatter and more round than these. They are my favourite vegetable by the way!
Could I have that as Eggplant Parmesean,please?

The eggplant I've grown when I lived in the southern US were rounder and fatter, but the same beautiful color.
I like baked eggplant, but fried is good too!
I love all eggplant varieties from the skinnies to the fats, from the purples to the whites - and there are lots of them at out local Monterey Market. I like them sliced, drizzled with olive oil and baked.
Great choice for the Letter E... but not a veggie that I care for very much...
Mountain Retreat
We call those aubergines here but they still taste as wonderful.
I haven't acquired a taste for eggplant but it sure has a beautiful color.

My daughter grew some of this slender beauties in her garden this year and I was a lucky recipient. Great photo, too!
The ones we get here are the old fashioned purple, egg-shaped ones. We call them aubergines. You can find white ones, but not often.
What a great idea for E. I LOVE it.
I am used to the round, fat kind that some other commenters mentioned, but I like the way these long, skinny ones look!
