What's the sense of traveling places without sampling thier local specialties. Food that makes the place known for and the other way around. Kilaw or Kinilaw is the Cebuano/Visayan word for Ceviche. In this dish, they mixed up: Onions; tomatoes; chili peppers; ginger and Tanigue; soaked in Vinegar.

I love kinilaw! Sadly my hubby's sensitive tummy can't take it, he gets sick if he eats that food.
I like sashimi but I don't know if I would like kinilaw....kakahiya man hindi ko pa nasubukan (takot!) lol.

i loveeee kinilaw! especially when the fish is really fresh, matamis ang meat. i tasted a great fish kinilaw in Davao, but i couldn't remember the name of the fish (arghh! may memory gap na!).:D
it's not for me, i've always have a small problem with my digestive system, hehe. but it looks good, if only...

i never eat much of kinilaw because we don't do that in our house! in our church my churchmates used to do milkfish kinilaw and i love it!
